10 minute recipe

Here’s what I had for dinner.

Make some wholemeal pasta, while:

Heat a chopped chicken breast, adding chilli paste and seeds as the first half of the chunks whiten up a bit.
Make sure you add the chilli soon, then the chicken will hold the chilli flavour.

Add coarsely chopped plum tomatoes (with lots of juice) and soon after, plenty of finely chopped garlic.

Keep the heat high, you want the juice to simmer off.

After a couple of minutes of stirring, you will probably get bored. Time to add the cheese. Urr about 8 small cubes of it? I used some brie type stuff, it’s a circle of cheese, don’t remember the make. It tastes of brie. Use that.

Around now, add loads more of the chilli paste/seeds as it will just taste of tomato at the moment. Also paprika, not too much, but it goes with the chicken.

Taste the sauce, if it needs a bit more garlic now would be good.

Now you should stir and simmer for a while, the sauce will change colour a bit to look a little like a curry. Not actually like one, just a bit.

Keep stirring… You don’t want it thick, but not watery - it should be bubbling away but not spitting much.

Soon you’ll think, I’m really hungry, let’s eat this stuff. Now crack an egg into the middle. Stir around, treat it like a stir fry, make sure the egg yolk fully breaks and moves around. It will be cooked enough in about 2 minutes.

Now serve it with the pasta and eat it!

Approximate price: 3 euros. Inflated price because I used the small Shell garage. A side effect of getting home at 9PM.

If you’re less impatient, simmering more could make a nicer sauce maybe. I enjoyed it.
